Hi, I'm Stéphane Lauzon. I weld offset smokers and smoker trailers in my shop in Plaisance, Quebec, one at a time, by hand. For caterers, restaurants, and anyone who likes to cook low and slow. 1/4-inch steel, visible welds, matte black and fire-engine red.

I deliver it myself
I load the smoker on the trailer and drop it off anywhere in Quebec or Ontario. Delivery included.
The steel I'd put in my own
Canadian 1/4-inch steel. Holds heat, and will outlast me.
Chef Colosse
A matte black and fire-red smoker trailer, with two warming cabinets, a stainless prep surface, and the client's logo I painted on by hand.

I build every smoker around one of three tank sizes. Pick based on how many people you feed, we work out the rest together.
